The Fastest Allergen Free Pizza Ever…

_rkp4075Last night my family was in the mood for pizza. Of course, this means making it at home as my son has a severe dairy allergy. But with this pizza dough recipe it couldn’t be simpler or faster. Unlike traditional pizza dough recipes this dough has no rise time. You just mix the ingredients, let the dough rest for about five minutes and you’re ready to roll.  This time saving homemade pizza dough is a real life saver when you’re trying to pull together a fast dinner for six.

The best part about making your own pizza at home is that the kids love to roll and stretch out the dough, and top with their favorite ingredients. The dough can be rolled super thin or stretched to be slightly thicker.  Make one large pizza or divide the dough into six smaller balls ready to be rolled out by your family. I put out small bowls of jarred tomato sauce, sliced tomatoes, turkey pepperoni, black olives, mushrooms, red pepper, green pepper, broccoli and dairy free soy cheese. (Note: Be extra careful about the “soy cheese you use; a lot of brands contain caesin, a derivitive of milk. I like to use the brand Follow Your Heart: Vegan Alternative). Whether you have some or all of these ingredients, your pizza will be healthier than any version you would have had from a pizza place.

After rolling out your dough, place the rounds on parchment lined baking sheets and top away. Bake in a 425 degree oven for 15-20 minutes, or until crust is lightly browned and soy cheese is melted. Let it rest a few minutes before cutting and serve with a green salad.

Start to finish this entire pizza dinner will be done in 30 minutes (that includes the kids’ topping their own pizzas). I don’t even think Dominos can top that one…

FAST ALLERGEN FREE PIZZA DOUGH

1 package active dry yeast

1 c. warm water (about 110 degrees)

1 ½ tsp. granulated sugar

1 tsp. salt

2 T. vegetable oil

2 ½ c. unbleached all purpose flour

 

Combine yeast and warm water with a wire whisk and set aside. In a mixer fitted with the dough attachment combine sugar, salt, vegetable oil and flour with yeast mixture for about one minute or until combine. Set aside to rest for five minutes.

 

Turn dough onto floured board and knead about 15 times. Cut into desired portions.

 

Preheat oven 425 degrees and place dough on nonstick baking pan. Top as desired and bake about 20 minutes or until crust is golden and topping is warmed through.

  • Thanks Alisa and Jennifer! Those are two of my boys, I have two other children as well (Matthew – 3) and Chloe (8). Jennifer – I know exactly what you mean. I have made some pizza “bombs”.. My lessons learned: use the best crust recipe and make sure your ingredients are top notch. Sometimes I even forgo the soy cheese (though my son John LOVES it) and just use sauce and veggies. I will guarantee you’ll love this dough recipe, for the fact alone it is so fast and doesn’t require a lot of kneading or rising. Give it another shot and let me know how it works for you.   • We just had awesome homemade pizza with Follow Your Heart vegan cheese this weekend too. I use a great pizza dough recipe from Peter Reinhart that is pretty close to yours – only you make it at least 8 hours ahead and keep it in the fridge. My 6-yr-old daughter ate more than my husband that night!

  • Great idea Ellen! You can mix your dough in the a.m and have it ready to go for dinner. I really like Follow Your Heart cheese. I’ve used it for baked pasta as well.

  • This pizza was great! I tried 2 diff. cheeses: Follow Your Heart Cheese and Galaxy Rice Shreds. I have to say the Galaxey Rice Shreds were REALLY good. My 2 yr old helped me and also helped herself to the rice shreds. Thank you for all your recipes!

  • FYI, the Galaxy RIce Shreds contain Casein – a derivative of milk
    the follow your heart cheese I found was not shredded, but shreds really easily.

  • well, I’m not very experienced in the kitchen.
    My daughter is allergic to milk, peanuts, tree nuts, eggs, fish. 1 episode with the epi pen at home when she drank my son’s milk. otherwise, no major events. She will be 3 in February and is starting to hate that she is eating food different from the rest of the family. She never cared before, so I didn’t worry too much about us eating take out pizza and her eating homemade spaghetti, etc, etc…
    well, I knew the day would come. I probably should have made more of an effort sooner to have us all eating the same things…
    anyway, the point is I have no experience in the kitchen. I had to google “what a dough attachment looks like” for the mixer…
    so, I tried the pizza dough. it was so sticky! is it supposed to be sticky?

  • This is not allergy free for those that can’t eat wheat or gluten, so a better name might stipulate dairy free or casein free.

  • Just wondering if you have a wheat-free version of the recipe. I have a bunch of different flours but am wondering about the ratios of each . . .My daughter’s school is having pizza day on Wed and I am trying to provide a dairy, wheat free version. Thanks
